As I have stated before, I take a Cooking for Life class every Thursday and today, we learned how to prepare cheese fondue. The ingredients we used were 1 pound of grated Swiss cheese, 2 cloves of minced garlic, 3 tablespoons of all-purpose flour, 2 tablespoons of butter, 1 1/2 cups of milk, 1/2 tablespoon of lemon juice, 2 teaspoons of dry mustard, and 1 teaspoon of salt. Melt the butter over medium-low heat in a bowl and add in the flour. Then, stir in the garlic and 1/2 a cup when the butter and flour mixture is smooth. Add in the rest of the milk, stirring constantly to thicken it. After all that, put in about a handful of cheese and mix until the cheese melts. Keep adding all the cheese until the it is melted. When that's done, add in the salt, mustard, and lemon juice. Don't forget to mix it well. There you have it, a Swiss cheese fondue. The next step is to enjoy it. I love to dip French bread, apples, and whole wheat bread. Next Thursday, I'll be back telling you how to make another simple, awesome dish.
