
To begin with, you'll need these ingredients:
- 2 cups of chopped and cooked spinach (made from 2 pounds of spinach)
- 2 cups of grated Parmesan cheese
- 1/2 cup of all-purpose flour
- 1 cup of ricotta cheese
- 2 eggs
- 2 teaspoons of nutmeg
- 2 teaspoons of salt
- Olive oil
Cook the spinach in a large pan with olive oil(about 3 tablespoons) until it shrinks, or about 10 minutes. Then in a large mixing bowl, mix in the cooked spinach, 1/2 cup of Parmesan, flour, ricotta, eggs, nutmeg, and salt. Scoop out a spoonful of the spinach mixture and shape it into a ball. After that, cover the ball with flour. Boil a pot of slightly salted water and cook the dumplings. When they float, they're done. Serve with the leftover Parmesan. Enjoy!!
