Crust:
- 1 3/4 cups of flour
- 1/4 cup cornstarch
- 1/2 cup of granulated sugar
- 1/4 teaspoon salt
- 1 cup butter, melted
- 1 1/2 cup granulated sugar
- 1/4 cup flour
- 4 eggs
- 1/2 cup lemon juice (3 large lemons)
Then for the luscious filling, whisk the sugar and flour together. Then, mix in the eggs and lemon juice. When everything is combined, pour the mixture over the crust and bake for 18-22 minutes. When the filling is set, let is cool down and rest for an hour. You can also chill the bars for refreshing lemon bars.
