With just a few simple ingredients you can make magic:
- 1/2 a cup of softened butter
- 1 cup of white sugar(I switched it with coconut sugar when I made mine)
- 1 egg
- 1 tablespoon of vanilla extract
- 1 1/3 cups of all-purpose flour
- 3/4 teaspoons of baking powder
- 1/4 teaspoon of salt
- Buttered cookie tray or cookie tray with baking sheet
In a mixing bowl, combine the butter and sugar with an electric mixer. Keep stirring until the butter mixture in nice and fluffy. Next, beat the egg and vanilla extract in. Then, mix the flour, baking powder, and salt in a separate bowl. Pour that bowl in the butter mixture and combine well. Scoop about 1 teaspoon of cookie batter(for each cookie) onto the cookie tray. Be sure to leave a generous 2 inch space between each cookie. Bake these cookies for 12-15 minutes or until the edges become golden, but if you used coconut sugar like me, until the whole cookie becomes golden.
