After walking around the Garden of the Gods in Colorado Springs, the ranger informed us that there was a little town called Manitou Springs nearby that had awesome, authentic food. And well, we go where the food is :P PJ's Bistro caught my attention because I had never tried Polish food. I've heard good things about it, so we decided to eat here for lunch. This was a very smart choice btw. Experiencing Polish food the first time, we ordered Pj's platter with pierogis, cabbage rolls, and a choice of meat (we chose beef stroganoff). PJ's pierogis are the bomb! They have a creamy potato filling inside and a nice sear on the outside. It's very much like a Polish dumpling. The cabbage rolls were equally amazing as well. However, let's just take a moment to appreciate the beef stroganoff. It's sooooo delicous omg. All the seasonings in the sauce are perfect. All their meats were served over a potato pancake. The Hungarian goulash was no different, wonderful pork over a layer of potato at the bottom. It's very smart how the potato pancake is at the bottom because it soaks up all the wonderful juices. To top off an extravagant meal, the kind waitress gave us a crepe stuffed with berry cream. This too was yummy and devoured within seconds. Mmmmm. As I'm writing this, I'm considering spontaneously flying back to Colorado just to eat PJ's food again. That's how mouthwatering this whole meal was.
