As for what you need:
- 3/4 of a cup of butter, at room temperature for 30 minutes
- 3 eggs, at room temperature for 30 minutes
- 1 3/4 cups of all-purpose flour
- 1 cup of unsweetened cocoa powder
- 1 teaspoon of baking soda
- 3/4 of a teaspoon of baking powder
- 1/2 a teaspoon of salt
- 1 cup of milk
- 1/2 a cup of strongly brewed coffee, cooled
- 2 cups of sugar
- 2 teaspoons of vanilla
- 1 cup of semisweet chocolate pieces
When you have the following, follow these directions:
Stir the flour, cocoa powder, baking powder and soda, and salt in a medium bowl. Then combine the milk and coffee in a 2 cup measuring cup. With an electric mixer on medium to high, mix the butter in a large bowl. After that, add the eggs one at a time, mixing well after each. Stir in the vanilla. Begin to add in the flour and milk mixture, alternating between the two. When everything is combined, add the chocolate pieces. Fill the muffin cups with about three-fourths of batter and bake for about 18 minutes.
